Numbulo: cured meat with a name to remember

Numbulo is listed among the signature tastes and appears in the gallery as thin cured slices. Ask about the meat, seasoning and curing method rather than reducing it to “local ham”. Travellers who avoid pork or cured meat need a confirmed substitute before booking, because removing one item changes a tenth of the advertised line-up.

Sikomaida and mantola occupy different sweet categories

Sikomaida is a fig preparation, while mantola refers to a confection built around nuts. They should not be introduced merely as two desserts. Ask how each is made, whether spices or alcohol appear in the recipe and what allergens are present. Nut, sesame, dairy and gluten questions must be answered by the venue for the actual products served.

Kumquat can appear in more than one form

The current menu references kumquat products without fixing a single preparation. Preserve, sweet and liqueur demonstrate different uses of the fruit. Guidance should explain processing and sweetness rather than presenting the ingredient as proof that every product is traditional to the same period.

Olives, cheese and drinks reset the palate

Savoury samples provide contrast after fruit and confectionery. Taste milder items before strongly cured meat or liqueur, use the supplied water between categories and ask whether the olive variety or cheese has a Corfu-specific origin. A product sold locally is not automatically produced locally; the guide should be able to make that distinction.

The published list says “and more”, which allows the board to respond to supply. Photograph labels only with permission and note exact names if the purpose is to buy later. Retail purchases are separate from the ten included tastes, and airline liquid or food restrictions still apply to anything taken home.

Wine, beer and liqueur require an alcohol plan
